A night in a mill on the pilgrim trail

Although it looks big castle, it is a family farm like the other ones, run by the Lucio family, who were once wheat and barley farmers in the hills of Val d'Orcia.


Perhaps because of this tradition, one of the members of the family built a mill and the Mulino Val d'Orcia is situated next to the agriturismo, in a corner of the Spedaletto Castle.

This mill is said to use a traditional method of milling wheat that is now almost extinct, having been replaced by mechanical mills. In other words, it processes organic wheat grown on the hills of Val d'orcia at a slow speed using the traditional "stone mill" method, which is said to make it possible to produce organic flour, pasta and cereals that preserve the nutrients inherent in the wheat grain. 

If you can't stay at this cool and wonderful agriturismo with its unique atmosphere, it's worth stopping at the mill on your way home to pick up a bundle of pasta that fully embodies the region and the family's traditions as a souvenir.

Mulino Val d'Orcia

Lucio, a farmer who had been farming in Val d'Orcia for generations, first bought a wheat mill just for fun, and his son Amedeo was in charge of the mill's production of processed wheat products, using old methods.

The wheat mill "Mulin Val d'Orcia" was born from the warehouse of Lucio's grandfather.

In contrast to the mass production of pasta with the help of machinery, the pasta is made using the ancient method of kneading the flour using the "stone milling" method, which is a slow process, followed by the pressing of the pasta in copper forms and the slow drying of the pasta in the open air.
